Right click on any track from the album and select the edit track option. At the bottom of the dit screen is an option to delete, select it and you are asked to confirm if you want to delete a) Only from EJukebox - ie only the track from EJ b)delete the file - whic competely deletes the track from your system or c) delete folder from EJ. Select C - delete folder and click delet subfolders when prompted and this should remove the album from EJ.

When re-loading the album you may have to change the name of the folder slightly. As EJ doesn't take any information from the folder name it wont affect any listing but sometimes EJ fails to recognise the folder if you dont (at least in my opinion)

The other option (my preffered option) is to again go into edit track and select the info icon. Look for the album via the web browser and save the album art to your HD (right click on the image and select save as). Then all you need to do is click the use image from icon and point EJ to where you saved the art work.

Hope this helps
